Dark roasts have been long misunderstood. You don’t see a lot of them in the speciality coffee arena, where the focus tends to be on lighter roasts. There’s good reason for this as lighter roasting allows us to tease out some of the more delicate tones and flavours of the coffee. But going darker also has its benefits too.
This coffee is a nod towards some of our favourite coffees from American roasters, whose darker roasts open up another realm of flavour. When you venture into darker roast profiles, you tend to bring out more body in the coffee, a thicker, more syrupy mouthfeel and when done well, you pull out those caramel and dark chocolate flavours,and just the right amount of smokiness.
And that’s just where we went with our French Roast. There’s a Medjool date and dried prune quality to this coffee. It’s got big body, sticky sweetness and a finish that stays with you long after you’ve washed-up your coffee cup.
